5 Minute Meal Prep: Vegan Creamy Tomato Basil Carrot and Squash Bisque
A super healthy easy blender recipe you can prepare under 10 minutes! This recipe makes for an amazing meal or even as a side dish. This soup is even tastier than your standard tomato basil bisque, and the best part is that it is packed with nutrients and veggies that you can barely taste.

I love blender recipes that barely take any time or cleanup to prep! Here's one of my Simple blender soup recipes from my detox meal plans you can prep in minutes.. It's so rich & flavorful ..I think it's even tastier than your classic tomato basil bisque & in this recipe I add more nutrients with hidden vegetables you can't even taste plus it's a great way to make such a light soup more filling–So why not blend them in!? . Vegan Creamy Tomato Basil Carrot & Squash Bisque Makes about 2-3 servings . 5 Roma tomatoes 1/2 of a small yellow squash, sliced in half 1/2 cup baby carrots 1/8 of a yellow onion (eyeball it) Large handful of fresh basil leaves 1/4 cup raw cashews(optional) 1/2 cup unsweetened unflavored almond milk 1/2 teaspoon red pepper flakes 1 Teaspoon pink sea salt 2 cloves garlic Directions Put all ingredients in a blender & blend on high until completely smooth. Pour into sauce pot, cover, bring to light boil, stir & reduce to lowest flame allow to simmer about 20-30 minutes stirring occasionally until flavor and color deepens and soup is condensed by about 1/3. Taste test, adjust seasonings and salt to your pallet if needed. To serve top with a fresh chiffonade of basil (Parmesan shavings *optional) and a pinch of red pepper flakes. 5 Roma Tomatoes
1/2 Yellow Squash (sliced in half)
1/2 Cup Baby Carrots
1/8 Yellow Onion
Large Handful of Fresh Basil Leaves
1/4 Cup Raw Cashews (optional)
1/2 Cup Unsweetened Unflavored Almond Milk
1/2 Tsp Red Pepper Flakes
1 Tsp Pink Himalayan Sea Salt
2 Cloves Garlic
- In a blender place onion, sliced squash, tomatoes, baby carrots, raw cashews, garlic, fresh basil, red pepper flakes, pink sea salt, and almond milk.
